Zucchini Flatbread

My momma's garden has had an overabundance of zucchini and squash this year! I have been looking for fun & delicious recipes to use up our stash! Here was a favorite recipe I loved creating:

(first time making homemade ricotta to use as the spread. So amazing and amazingly easy!) 

In the weeks between passing boards and starting my job as a nurse, I soaked up every moment of homemaking that I could. I had been dreaming of this feeling for 2 years - it made the freedom OH SO SWEET!
